Preliminary Processing of Catfish Without Fishy
After buying catfish, if it has not been made before, then you proceed to take the intestines and clean the fish. Next, prepare some boiling water, you use this water to water the fish. This can help remove the oily part from the outside of the fish.
After peeling off the oily layer on the surface of the fish skin, you wash the fish with a diluted lemon salt water mixture. Because the catfish is a copper fish, it will be very fishy, doing so can both reduce the fishy smell of the fish and remove the bacteria that stick to the surface of the fish.
Finally, wash the fish with cold water, drain. Buy ginger, use a razor to remove the outer skin, wash it and then grind it. Chili just picks up the stem, wash it and then mince it with ginger.
Catfish after being cleaned and drained, use a knife to lightly cut the fish body on both sides. Doing this when marinating spices will penetrate evenly into the fish meat, and it will be easier to eat.
Put the fish in a large bowl, add ½ teaspoon of salt, 1 teaspoon of seasoning, 1 teaspoon of ginger powder (optional), ½ teaspoon of MSG, ½ teaspoon of sugar and finally 1 teaspoon of ground pepper. mix. Let the fish marinate for about 30 minutes to absorb the spices.

First, add the crushed ginger and chili to a mixing bowl. Continue to add 1 tablespoon fish sauce, 1 tablespoon sugar, 1 teaspoon lemon juice and stir well. Because the fish has been lightly marinated in the above step, the sauce will be slightly sweeter to balance the dish more evenly.
Take a pan of oil on the stove, wait for the oil to heat up, then add 2 fish in turn to fry until golden brown. A little trick to prevent oil from splashing when frying is to put a little salt or chili in the pan, so when you drop the fish in the oil, it won’t splash around.
